Summary:
Join Award-winning Michelin Star, Chef Roberto Alcocer at Valle, a Guadalupe Valley Kitchen as hedraws on the traditions of Mexico's renowned wine region and the bounty of local farms and sea food, to create Valle's bold cuisine paired with a selection on Mexican wine, best enjoyed on the seaside dining veranda in the Dining Room which boasts beautiful ocean views. Guest can enjoy an intimate dining experience with a Chef's tasting menu or a la carte, or if is the case of a special celebratory evening in our private dining room.
The Restaurant General Manager is responsible for overseeing the assigned Food & Beverage outlet to ensure optimum performance, exceptional guest service, and maximum profitability of all functions. They will train and motivate staff to exceed goals. Previous F&B Leadership Fine Dining experience is required.
Supports and Manages Valle while working closely with the Executive Chef and other hotel departments.
Ensure effective hiring, training, development, promotion, and continuous reinforcement.
Must have basic wine knowledge.
Develop and implement creative strategies for revenue enhancement and cost containment.
Develop and recommend the budget, marketing plans, and objectives. Manage within those approved plans.
Maintain and oversee food and beverage cost.
Must be knowledgeable in Microsoft Office, including Word and Excel.
Prepares forecasts and reports and assists in the development of the food & beverage budget.
Takes initiative to develop and execute new promotions, events, etc.
Works with culinary to develop new food menus responsive to the local market.
Conducts weekly staff meetings to include ongoing training and safety classes.
Ability to work a flexible schedule that will likely include evenings, weekends, and holidays.
Completes weekly payroll for outlet employees.

The annual salary range for this position is $76,700. - $115,300. This is the pay range for this position that The Seabird Resort and Mission Pacific Hotel reasonably expects to pay. Decisions regarding individual salaries will be based on a number of factors, such as experience and education.

Qualifications:
Must be able to stand for long periods of time.
Must have Restaurant Manager experience in fine dining setting.
Must be able to repetitively lift, push, pull & carry up to 15 lbs., frequently up to 25 lbs. and occasionally up to 75 lbs.
Must be able to twist, bend and squat frequently;kneel or crawl occasionally; infrequently climb a ladder.
Must be able to perform repetitive hand & arm movements, pushing and pulling, and simple grasping frequently; squeezing, overhead reaching & fine manipulation occasionally.
Must be available AM and PM shifts. Restaurant is open Tuesday - Saturday.
